First, heat your oven to 400°F. Peel off the outer papery skin from the garlic bulb, but leave the skins on each clove. Use a sharp knife to cut about ¼ inch from the top, showing the cloves inside.

Set your trimmed garlic on a foil sheet, pour olive oil over the top so it runs into the open cloves. Wrap the foil loosely, put it on a small baking tray, and bake for 40 minutes until your kitchen smells amazing.

After the garlic cools enough to touch, squeeze the soft, golden cloves into your blender or food processor. Toss in the Greek yogurt, broken feta, olive oil, and lemon juice.

Mix until completely smooth, and don't forget to scrape the sides down when needed. Add salt and pepper how you like it, blend one more time, and pour into a wide serving dish.

Top your dip with some olive oil, scatter fresh herbs on top, and add red pepper flakes if you want some kick. Serve with veggies, warm pita, or your favorite dippers.
