Feta Garlic Blend Appetizer (Print Version)

# Ingredients:

→ Roasted Garlic Base

01 - 1 complete bulb of garlic
02 - 1 tablespoon premium olive oil

→ Creamy Dip Base

03 - ¾-1 cup thick Greek yogurt (full fat or 2% works best)
04 - 4 ounces broken up feta cheese
05 - 1 tablespoon olive oil
06 - 1 tablespoon freshly squeezed lemon juice
07 - Salt and black pepper to your liking

→ Fresh Garnishes

08 - A splash of premium olive oil
09 - 1-2 tablespoons finely cut fresh herbs (dill, parsley, or chives)
10 - A tiny bit of red pepper flakes (if you want)

# Instructions:

01 - First, heat your oven to 400°F. Peel off the outer papery skin from the garlic bulb, but leave the skins on each clove. Use a sharp knife to cut about ¼ inch from the top, showing the cloves inside.
02 - Set your trimmed garlic on a foil sheet, pour olive oil over the top so it runs into the open cloves. Wrap the foil loosely, put it on a small baking tray, and bake for 40 minutes until your kitchen smells amazing.
03 - After the garlic cools enough to touch, squeeze the soft, golden cloves into your blender or food processor. Toss in the Greek yogurt, broken feta, olive oil, and lemon juice.
04 - Mix until completely smooth, and don't forget to scrape the sides down when needed. Add salt and pepper how you like it, blend one more time, and pour into a wide serving dish.
05 - Top your dip with some olive oil, scatter fresh herbs on top, and add red pepper flakes if you want some kick. Serve with veggies, warm pita, or your favorite dippers.

01 - You can make this dip 3 days before and keep it in a sealed container
02 - Great for putting on sandwiches, eating with roasted veggies, or adding to grain bowls
03 - You can roast the garlic ahead of time and store it covered in olive oil for a week
