Velvet Cookies with Cheese (Print Version)

# Ingredients:

01 - Softened cream cheese (4 ounces).
02 - Granulated sugar (1/4 cup).
03 - Pinch of salt (1/8 teaspoon for filling).
04 - One room temperature egg yolk (for filling).
05 - Two teaspoons of sour cream.
06 - A splash of vanilla extract (1/4 teaspoon for filling).
07 - Two cups of plain flour.
08 - Two teaspoons of cocoa powder.
09 - Quarter teaspoon salt (for cookies).
10 - Softened butter (1 cup).
11 - Half cup of brown sugar.
12 - One room temperature egg yolk (for cookie dough).
13 - Vanilla extract (1 teaspoon for cookie dough).
14 - Red gel food coloring.
15 - Red decorating sugar.

# Instructions:

01 - Whip together cream cheese with sugar till smooth. Throw in the salt, vanilla, egg yolk and sour cream. Stir until everything's mixed up nicely. Pop it in the fridge for half an hour.
02 - Combine flour with cocoa powder and salt. In another bowl, beat the butter and sugar together. Drop in egg yolk and vanilla. Slowly add the flour mix and red coloring while mixing.
03 - Make small balls from the dough, roll them in red sugar. Push a dent into each center. Stick them in a 300°F oven for 10 minutes.
04 - Make the centers deeper, then spoon in cream cheese mix. Return to oven for 10-12 more minutes until the filling firms up.
05 - Leave on the baking tray for 2 minutes, then move to a cooling rack until totally cool.

# Notes:

01 - You can mix regular sugar with food coloring to make your own red sugar.
02 - Feel free to skip the sour cream in the filling if you want.
03 - They'll stay good for 2-3 days on the counter or up to 5 days in the fridge.
