Spicy Cream-Filled Ginger Treats (Print Version)

# Ingredients:

01 - 6 oz cold cream cheese
02 - 3 tablespoons white sugar
03 - 1/2 teaspoon pure vanilla
04 - 6 tablespoons sugar for coating
05 - 1/2 teaspoon ginger powder
06 - 1/2 teaspoon powdered cinnamon
07 - 1/8 teaspoon each of allspice, nutmeg, cloves
08 - 2 1/2 cups flour
09 - 2 1/2 teaspoons each of ground ginger and cinnamon
10 - 1/2 teaspoon table salt
11 - 1/2 teaspoon baking soda powder
12 - 3/4 cup soft unsalted butter
13 - 3/4 cup packed brown sugar
14 - 2 egg yolks at room temp
15 - 1/3 cup dark molasses

# Instructions:

01 - Whip together cream cheese with sugar and vanilla until smooth. Shape into 18 small balls and pop in freezer.
02 - Stir together sugar with all the spices in a bowl.
03 - Combine all dry stuff first. Beat butter with sugar, add in egg yolks and molasses, then stir in your dry mixture.
04 - Grab some dough, push it flat, put a frozen filling ball in middle, wrap dough completely around it and roll in your spice sugar.
05 - Put 6 cookies on each tray and bake at 350°F until done, about 11-12 minutes.
06 - Leave them on the tray for 10 minutes, then move to a cooling rack.

# Notes:

01 - Make sure filling stays frozen till you need it.
02 - Don't crowd the oven with too many batches.
03 - Keep leftover cookies in the fridge.
