# Ingredients:

01 - 3 big sweet potatoes.
02 - 3 tbsp of olive oil.
03 - 1/2 tsp of cinnamon.

05 - 1/2 tsp of smoked paprika.
06 - 1/2 tsp ground red pepper flakes.
07 - 1/2 tsp of coriander.
08 - 1 tsp of coarse salt.
09 - Half a teaspoon of black pepper.
10 - 1 tablespoon of honey (hot or regular).
11 - A third cup of crumbled feta cheese.
12 - Some fresh parsley or chives.
13 - Extra honey for topping.

# Instructions:

01 - Slice the potatoes into rounds, about 1/3-inch thick. Clean and dry them properly, then heat the oven up to 425°F.
02 - Grease your pan lightly, toss the potato rounds in olive oil, sprinkle spices, drizzle honey, and keep them apart for even cooking.
03 - Bake for 20 minutes, flip them, and then cook for another 20-25 until crispy and perfectly golden.
04 - Place the rounds on a plate, toss on feta, sprinkle with salt, drizzle honey, and top with fresh herbs.
