Crispy Bang Bang (Print Version)

# Ingredients:

01 - 2 cups of frying oil, like vegetable or canola.
02 - 1 pound chicken breast, boneless and skinless.
03 - 1 large egg, beaten.
04 - ⅓ cup full-fat milk.
05 - ¼ cup plain flour.
06 - ⅓ cup mayo.
07 - ¼ cup cornstarch or potato starch.
08 - 1 teaspoon fine salt.
09 - ½ teaspoon ground black pepper.
10 - 3 tablespoons chili sauce that's sweet.
11 - 2 tablespoons runny honey.
12 - 1 tablespoon sesame seeds for garnish.
13 - 1 tablespoon sriracha (more or less to taste).
14 - ½ teaspoon of extra salt for seasoning.

# Instructions:

01 - In a medium bowl, mix mayo, chili sauce, sriracha, honey, sesame seeds, and some salt until smooth. Leave it aside for later.
02 - Slice the chicken into small 1-inch bites. Break an egg into a medium dish and mix it with milk. Use another bowl to combine flour, cornstarch, pepper, and salt.
03 - Dip the chicken chunks into the wet egg mixture. Toss them in a big zip bag filled with the dry flour mixture. Shake until they're well coated.
04 - Warm up the oil at medium-high heat. Fry the chicken in small amounts for about 3–4 minutes per batch. Turn them while cooking so they brown on all sides.
05 - Let the fried chicken drain on paper towels. Move it into a bowl with the sauce, and stir until everything's coated. Eat right away!

# Notes:

01 - Tastes best when eaten hot off the stove.
02 - You might need to fry the chicken in several rounds.
03 - Adjust the heat in the sauce if you'd like it spicier or milder.
