Texas Roadhouse Chicken (Print Version)

# Ingredients:

01 - 1/2 pound mushrooms, sliced thin.
02 - 1 tablespoon butter, with extra if you're running low.
03 - 2 large chicken breasts, fresh if possible.
04 - 1 medium onion, cut into pieces about a quarter-inch thick.
05 - 1/4 pound shredded Monterey Jack cheese.
06 - A teaspoon of seasoned salt.
07 - Add salt to taste if needed.
08 - A half-teaspoon of black pepper.

# Instructions:

01 - Slice the breasts horizontally, then flatten them gently between cling film. Sprinkle both sides with pepper and some salt.
02 - Use medium-to-low heat to melt some butter. Sauté onions with a little salt for 3–4 minutes. Toss in mushrooms and cook until they're browned, about another few minutes. Take them out of the skillet.
03 - Add more butter if your pan's dry. Cook the chicken for around 6–8 minutes on one side. Flip and cook the other side for about 3–4 minutes longer.
04 - Layer the cooked veggies over the chicken. Sprinkle cheese on top and let it melt. Serve hot and enjoy right away.

# Notes:

01 - Don't put too many pieces of chicken in the skillet at once—you might have to cook in rounds. Flatten evenly so everything cooks the same. Warm cheese tastes best, so serve right after melting.
