Goat Cheese Potato Bites (Print Version)

# Ingredients:

01 - 2 big unpeeled sweet potatoes.
02 - 2 tbsp olive oil.
03 - 1/2 tsp maple syrup or honey.
04 - 1 tsp coarse salt.
05 - 1/2 tsp ground black pepper.
06 - 3 tbsp dried cranberries.
07 - 1 tbsp fresh rosemary, chopped.
08 - 2 oz goat cheese, crumbled.
09 - 1/4 cup toasted pecans.
10 - 1 small shallot, diced.
11 - 1/2 tsp Dijon mustard.
12 - 2 tsp apple cider vinegar.
13 - 1/2 Granny Smith apple, diced.

# Instructions:

01 - Preheat to 425°F. Grab two baking trays. Add oil to them.
02 - Chop into 1/2-inch circles. Place them on trays. Coat in oil. Sprinkle salt and pepper.
03 - Cook one side for 15-20 mins. Flip them over. Cook 5-8 more mins. They should soften.
04 - Combine vinegar, mustard, and sweetener in a bowl. Toss in chopped pecans, shallot, apple, and cranberries. Add rosemary and half the goat cheese.
05 - Add topping to cooked sweet potato slices. Scatter rest of the cheese on top.

# Notes:

01 - Make the topping the day before, if needed.
02 - You can cook the potatoes earlier and warm them up later.
03 - Choose slim sweet potatoes for even slices.
04 - No peeling required for this one.
