In a medium bowl, mix flour, baking powder, and salt together until well combined.

Mix butter and sugar with mixer on high for about 3 minutes till fluffy. Then add egg, vanilla, and almond extract if using, and beat another minute.

Slowly blend dry mix into wet ingredients on low. If dough feels sticky, add another tablespoon of flour.

Split dough into two parts, roll each between parchment to 1/4-inch thick. Put both in fridge for 1-2 hours.

Use cutters on the cold dough. Cook at 350°F about 11-12 minutes until edges turn slightly brown.

Let cookies sit on the baking sheet for 5 minutes, then move to cooling rack until completely cool before adding your chosen topping.
