Mexican Migas Tasty Peppers (Print Version)

# Ingredients:

→ Base

01 - 3 tbsp cooking oil
02 - 2 corn tortillas, sliced into strips or squares
03 - 4-5 eggs, quickly beaten

→ Fresh Vegetables

04 - 1 jalapeño, chopped small
05 - 1 small red bell pepper, chopped
06 - 1 small yellow or white onion, chopped
07 - 1 ripe tomato, chopped

→ Cheese & Seasonings

08 - ½ cup grated Monterrey Jack or pepperjack cheese
09 - Salt and fresh ground pepper as needed

→ Optional Toppings

10 - Chili flakes for spice
11 - Fresh cut peppers
12 - Sliced avocado
13 - Favorite spicy sauce

# Instructions:

01 - Start by warming your cooking oil in a big pan. Toss in your tortilla pieces and cook till they turn golden and crunchy, around 4-5 minutes, flipping now and then. Pull them out onto paper towels and add a bit of salt while they're still hot.
02 - Using the leftover oil in the same pan, toss in your chopped peppers and onion. Let them cook till they're soft and smell good, about 5 minutes.
03 - Add your chopped tomato, then pour your beaten eggs over everything. Sprinkle with salt and pepper, and mix gently.
04 - Cook the eggs for 2-3 minutes, stirring a bit, just until they start to firm up but stay creamy.
05 - Turn off the heat and mix in your crunchy tortilla bits and grated cheese. Add chili flakes, more peppers, avocado, and some hot sauce if you want.

01 - You can use bagged tortilla chips to save time instead of making your own
02 - Throw in some chorizo or any meat to make it more filling
