Twice Baked Sweet Treat (Print Version)

# Ingredients:

01 - 8 sweet potatoes, medium-sized and evenly shaped.
02 - 2 tbsp butter, unsalted.
03 - 2 tbsp packed brown sugar.
04 - ½ tsp ground cinnamon.
05 - ½ tsp table salt.
06 - 2 tbsp all-purpose flour.
07 - 2 tbsp brown sugar, packed.
08 - 2 tbsp pecans, finely chopped.
09 - 2 tbsp butter, chilled and cubed.
10 - ½ cup tiny marshmallows.
11 - ¼ cup dried cranberries, diced small.
12 - Nonstick spray.

# Instructions:

01 - Set oven to 400°F. Spray a foil-lined tray. Pierce potatoes and cook them for 45-50 minutes until soft.
02 - Once potatoes cool, remove their tops. Scoop out their centers, leaving a thin border. Combine the potato pulp with butter, sugar, cinnamon, and salt. Mash it all together.
03 - Combine flour and sugar in a bowl. Mix in the butter cubes until it forms crumbs. Toss in the pecans and stir.
04 - Spoon the mashed filling into 6 potato skins. Spread streusel on top. Bake on 350°F for 20 minutes.
05 - Add marshmallows on top and bake 3 more minutes. Sprinkle with cranberries before serving warm.

02 - Pick potatoes similar in size for consistent results.
03 - Decorate by piping in the potato filling if desired.
