Toffee Date Sponge Cake (Print Version)

# Ingredients:

01 - 1 cup (200g) chopped pitted dates.
02 - 1 cup hot boiling water.
03 - 1 teaspoon baking soda.
04 - 1 cup (125g) plain flour.
05 - 1 teaspoon baking powder.
06 - 1/4 teaspoon salt.
07 - 1/2 teaspoon cinnamon powder.
08 - 1/2 cup (115g) soft unsalted butter.
09 - 3/4 cup (150g) brown sugar, firmly packed.
10 - 2 large eggs.
11 - 1 teaspoon vanilla flavoring.
12 - 1/2 cup (115g) soft unsalted butter for the topping.
13 - 1 cup (200g) brown sugar, firmly packed for the topping.
14 - 1 cup (240ml) double cream.
15 - 1 teaspoon vanilla flavoring for the topping.

# Instructions:

01 - Let dates sit in hot water mixed with baking soda for about 15-20 minutes until they're soft and mushy.
02 - Stir flour, baking powder, salt, and cinnamon together in a bowl.
03 - Beat the butter with sugar until fluffy, drop in eggs and vanilla. Stir in the date mix, then gently add the dry items.
04 - Transfer to a greased 8-inch dish. Put in oven at 350°F and cook 30-35 minutes until a stick comes out without batter.
05 - Heat butter, mix in brown sugar and cream. Stir until it's completely blended, then put in vanilla.
