Warm your oven to 400°F. Put parchment on a baking tray.

Mix together the sausage, cheddar, panko, 1 egg, and thyme leaves.

Beat the other egg with 1 tablespoon water until smooth.

Flatten pastry sheets and slice each one into two lengthy strips.

Spread sausage mixture along strip centers. Add Dijon to one edge, egg mixture to the other.

Fold pastry over the filling, use egg wash to stick it shut. Put sealed side down.

Make shallow cuts on top and then divide into 1 1/2 inch pieces.

Paint with egg wash, sprinkle seasoning on top. Cook 18-20 minutes till brown and puffy.
