Thyme Honey Sausage Bites (Print Version)

# Ingredients:

01 - 1 pound pork and sage breakfast sausage meat.
02 - 1/2 cup grated strong cheddar.
03 - 1/2 cup panko crumbs.
04 - 2 eggs, split up.
05 - 2 tablespoons tangy Dijon.
06 - 1 tablespoon fresh thyme picked from stems.
07 - 17.3 oz package puff pastry containing 2 sheets.
08 - 2 tablespoons everything bagel mix.
09 - Spicy honey for drizzling on top.

# Instructions:

01 - Warm your oven to 400°F. Put parchment on a baking tray.
02 - Mix together the sausage, cheddar, panko, 1 egg, and thyme leaves.
03 - Beat the other egg with 1 tablespoon water until smooth.
04 - Flatten pastry sheets and slice each one into two lengthy strips.
05 - Spread sausage mixture along strip centers. Add Dijon to one edge, egg mixture to the other.
06 - Fold pastry over the filling, use egg wash to stick it shut. Put sealed side down.
07 - Make shallow cuts on top and then divide into 1 1/2 inch pieces.
08 - Paint with egg wash, sprinkle seasoning on top. Cook 18-20 minutes till brown and puffy.

# Notes:

01 - You can stick them in the freezer before cooking.
02 - Skip the cheese if you can't have dairy.
03 - They taste best warm with a bit of hot honey on top.
