Melty Cheese Sandwich (Print Version)

# Ingredients:

01 - Thick cut sourdough (2 slices)
02 - Plain butter (1 tablespoon)
03 - Mayo (2 teaspoons)
04 - Freshly shredded sharp cheddar (3.5 ounces)
05 - Freshly shredded Gruyère (1 ounce)

# Instructions:

01 - Warm up your cast-iron pan on low heat. Slice your bread into thick 1/2-inch pieces and shred both cheese types
02 - Put 1 teaspoon of mayo on one face of each bread slice
03 - Drop butter in the warm pan, place bread with mayo facing down, stack cheese on top, then cap with second slice mayo facing up
04 - Put the lid on and let it cook for 2-3 minutes till the bottom turns golden
05 - Flip the sandwich carefully, cover again and cook about 2 minutes until cheese gets all gooey and the other side browns
06 - Slice it corner to corner and eat right away while the cheese is still stretchy
