Warm up your cast-iron pan on low heat. Slice your bread into thick 1/2-inch pieces and shred both cheese types

Put 1 teaspoon of mayo on one face of each bread slice

Drop butter in the warm pan, place bread with mayo facing down, stack cheese on top, then cap with second slice mayo facing up

Put the lid on and let it cook for 2-3 minutes till the bottom turns golden

Flip the sandwich carefully, cover again and cook about 2 minutes until cheese gets all gooey and the other side browns

Slice it corner to corner and eat right away while the cheese is still stretchy
