Garlic Focaccia Muffin Cups (Print Version)

# Ingredients:

→ Base

01 - Pre-made pizza dough (1.5 pounds)
02 - Good quality olive oil (½ scant cup)

→ Aromatics & Seasonings

03 - Whole garlic cloves (8)
04 - Sprigs of fresh rosemary (4)
05 - Sea salt flakes

# Instructions:

01 - Let pizza dough warm up in an oiled bowl, then slice into 12 equal chunks without working it too much
02 - Add 1 teaspoon olive oil to each cup in your muffin tin
03 - Lightly roll dough into balls, drop into oiled muffin cups, then wrap and let rest near your oven as it heats to 400°F
04 - Finely chop the garlic and strip rosemary leaves from stems, put aside
05 - Warm remaining oil until it's hot enough (test with a tiny splash of water), take off heat, toss in garlic and rosemary
06 - Drizzle all your flavored oil over dough balls, poke holes with fingertips, pushing herbs and garlic into the dough
07 - Pop in oven for 14-16 minutes, cover with aluminum foil if tops get too dark

# Notes:

01 - Tubes of pizza dough work fine when you can't find fresh
02 - Handle dough gently to keep those air pockets intact
03 - Letting dough sit makes it taste better and feel nicer
04 - Don't skimp on the olive oil for proper flavor
