Chickpea Med Bowl (Print Version)

# Ingredients:

01 - 2 tablespoons cold-pressed olive oil.
02 - 2 tablespoons squeezed lemon juice.
03 - 1 garlic clove, finely minced.
04 - 1 teaspoon grainy mustard.
05 - 1 teaspoon rock salt.
06 - Black pepper to taste.
07 - 3 cups boiled chickpeas, washed and dried.
08 - 2 cups assorted grape tomatoes, cut in half.
09 - 1/2 English cucumber, chopped into small cubes.
10 - 1/2 cup marinated red onions.
11 - 1/2 cup pitted kalamata olives, sliced.
12 - 1/2 cup fresh chopped parsley.
13 - 1/4 cup snipped dill.
14 - 1/4 cup torn mint leaves, plus extra for topping.

# Instructions:

01 - Mix oil, lemon juice, minced garlic, mustard, salt, and pepper together in a big bowl.
02 - Throw in chickpeas, tomatoes, cucumber, marinated onions, and olives. Stir everything until coated well.
03 - Sprinkle in herbs, mix once more. Adjust flavor if needed and top with extra mint.
