→ Broth

01 - 600ml high-quality beef stock
02 - 1 tablespoon miso paste
03 - 1 tablespoon sesame oil
04 - 1 tablespoon soy sauce
05 - 1 tablespoon gochujang
06 - 1 carrot, chopped roughly into big pieces
07 - 1 shallot, cut into fourths
08 - 5-6cm piece of ginger, sliced into thin rounds
09 - 2 spring onions, finely sliced
10 - 3 garlic cloves, left whole but peeled
11 - 1 tablespoon sweet soy sauce (Kecap Manis)

→ Toppings

12 - 200g rice noodles
13 - 1 teaspoon soy sauce
14 - 1 tablespoon crispy shallots (optional)
15 - 1 teaspoon black sesame seeds
16 - 2 sirloin steaks
17 - 1 teaspoon sesame oil (optional)
18 - Handful of shiitake mushrooms, sliced
19 - 1 red chili, sliced into thin rings
20 - Few sprigs of coriander
21 - 1 egg
22 - 1 pak choi, halved down the middle
23 - 1 teaspoon sweet soy sauce (Kecap Manis)

# Instructions:

01 - Toss all ingredients for the broth into a large pot and heat over a medium flame. Let it bubble gently for anywhere between 30 and 60 minutes. Stir here and there for better flavor.
02 - Put the egg in a small pan filled with cold water. Bring it to boil and let it cook exactly 6 minutes. Move it straight to iced water, then peel it once it's cool enough to handle.
03 - Heat up a frying pan and cook the shiitake mushrooms together with the pak choi. Fry until they look golden, then set them aside.
04 - In a super hot pan, cook the steaks for about 1 to 2 minutes on each side. Take them off the heat and leave them to rest for 3 minutes.
05 - Follow the instructions on your noodle package to cook them. Drain off the water when they're done.
06 - Strain the broth. Split the noodles between bowls and pour the hot broth over them. Add slices of steak, half the egg, pak choi, and mushrooms on top.
07 - Add chopped chili, coriander, sesame seeds, crispy shallots, and a dash of sesame oil for a finishing touch if you'd like.

# Notes:

01 - Loved by folks at Gordon Ramsay's cooking school
02 - The more time you let the broth simmer, the richer the taste gets
03 - Ideal for making an extra-special lunch or dinner
