Spicy Shrimp Sushi Bowl (Print Version)

# Ingredients:

→ Shrimp

01 - 1 pound of shrimp, peeled and cleaned up
02 - 1/3 cup mayonnaise
03 - 2 teaspoons hot sriracha
04 - 2 tablespoons chili sauce (sweet)
05 - Juice from 1/2 lime
06 - A tiny bit of salt

→ Sushi Rice

07 - 2 cups short-grain rice meant for sushi
08 - 2 cups water to cook rice
09 - 3 tablespoons sweet mirin
10 - 2 teaspoons sugar
11 - 3/4 teaspoon of basic salt

→ Assembly

12 - 1 cup edamame beans without shells
13 - 1 cucumber, cut into thin round slices
14 - 1 big carrot, shredded finely
15 - 1 avocado, chopped into little cubes
16 - Half a bunch of green onions, diced
17 - Some crispy onion bits as a topping
18 - Sprinkle with sesame seeds
19 - Crushed nuts like peanuts

# Instructions:

01 - Combine mayo, sriracha, sweet chili, lime juice, and just a dash of salt in a bowl. Set it aside for later.
02 - Throw the shrimp into boiling water for a minute, then strain it. Cut into small chunks and toss half the sauce over them.
03 - Rinse rice until the water looks clear. Let it cook for 15 minutes, then rest for 10 more. Stir warm mirin, salt, and sugar into it.
04 - Add a bit of sesame oil and a pinch of salt to edamame. Toss the cucumber with mirin, shred carrots fine, and chop green onions.
05 - Place a bed of rice at the bottom of your bowl. Top it off with shrimp, avocado, veggies, peanuts, crispy onions, sesame seeds, and drizzle some sauce on top.
