Coconut Dumpling Thai Soup (Print Version)

# Ingredients:

→ Core

01 - 1 tablespoon cooking oil
02 - 1 chopped onion
03 - 3 garlic cloves, crushed
04 - 1 tablespoon grated fresh ginger
05 - 3 tablespoons red curry mix

→ Fluids

06 - 4 cups veggie or chicken stock
07 - 1 can (14 oz) coconut cream
08 - 2 tablespoons dark soy sauce

→ Add-ins & Toppings

09 - 1 cup sugar snap peas
10 - 1 sliced red capsicum
11 - 1 cup ready dumplings
12 - Chopped cilantro and fresh lime pieces

# Instructions:

01 - Warm oil in a big pot, soften the onion for 5 minutes till clear
02 - Toss in crushed garlic and ginger, cook them for a minute to get their smell going
03 - Mix curry paste in and let it cook a bit to wake up its flavors
04 - Add stock and coconut cream, let everything bubble slowly
05 - Toss snap peas and capsicum in, cook till they're vibrant and slightly crunchy
06 - Throw in dumplings and soy sauce, warm through. Scatter cilantro and lime on top
