Air Fryer Eggplant (Print Version)

# Ingredients:

→ Main

01 - 1 big eggplant

→ Sauce

02 - 2 tablespoons soy sauce, reduced sodium
03 - 2 tablespoons avocado oil
04 - 1 tablespoon optional chili oil
05 - 2 tablespoons sugar, white
06 - 3 garlic cloves minced, about 2 tablespoons

# Instructions:

01 - Cut the eggplant into slices about half an inch thick. Add small cuts in the middle to let sauce soak in.
02 - In a shallow dish, combine sugar, garlic, soy sauce, avocado oil, and chili oil if using.
03 - Put eggplant slices in an air fryer lined with parchment. Spoon sauce on top. Air fry at 350°F for 15 mins. For extra crunch, broil for 2 mins.

# Notes:

01 - Bake in an oven at 375°F for half an hour if needed.
