Cut the eggplant into slices about half an inch thick. Add small cuts in the middle to let sauce soak in.

In a shallow dish, combine sugar, garlic, soy sauce, avocado oil, and chili oil if using.

Put eggplant slices in an air fryer lined with parchment. Spoon sauce on top. Air fry at 350°F for 15 mins. For extra crunch, broil for 2 mins.
