# Ingredients:

01 - 2 slices of medium-sized bread.
02 - 3/4 cup cooked chicken, shredded.
03 - 1/4 cup diced red pepper.
04 - 2 tablespoons minced red onion.
05 - 1 tablespoon of chipotle-flavored mayonnaise.
06 - 1/2 tablespoon fresh lime juice.
07 - 1 teaspoon of honey.
08 - 1-2 slices of pepper jack cheese.
09 - Season with salt and black pepper.
10 - Optional toppings: green onion, cilantro, parsley, or hot sauce.

# Instructions:

01 - Set your oven to 400°F and let it warm up.
02 - Cover the baking tray with parchment paper.
03 - Combine chicken, red onion, and peppers. Stir in the mayo, honey, lime juice, and season with salt and pepper to taste.
04 - Lightly toast bread. Spread the salad mix on top, then layer with cheese slices.
