Protein Cookie Dough Balls (Print Version)

# Ingredients:

→ Main Components

01 - 1 cup of low-fat cottage cheese
02 - 2 tbsp no-sugar maple flavoring (try Lakanto brand)
03 - 1 tsp vanilla extract (natural)
04 - 1 1/2 cups almond meal (or safety-treated regular flour)

→ Extra Add-ins

05 - 1/4 cup protein powder with vanilla flavor (or whatever you like)
06 - 1 1/2 cups sugar-free chocolate bits (Lily's works well), split into portions
07 - 1 tsp oil from coconuts

# Instructions:

01 - Throw your cottage cheese into a blender and whiz it until it's totally smooth with no lumps.
02 - Keep 1 cup of chocolate bits aside for later. Grab a bowl and mix your smooth cottage cheese with everything else until it's all combined.
03 - Stick your mixture in the fridge for half an hour so it gets firm enough to handle.
04 - Cover a tray with parchment, then scoop and roll your cold mixture into little balls. Put them on the tray and stick them in the freezer for at least 20 mins.
05 - Melt your saved chocolate bits in the microwave, stopping every 15 seconds to stir. Once smooth, dunk each frozen ball in chocolate and put back on the paper. Chill until the outside hardens.
