Garlic Parmesan Chicken Potatoes (Print Version)

# Ingredients:

01 - 4 chicken breasts, boneless and skinless (thighs work too for extra tenderness)
02 - 1 teaspoon of your favorite Italian herb blend
03 - 1/2 teaspoon of rich, smoked paprika
04 - 1/2 teaspoon salt to taste
05 - 1/4 teaspoon black pepper, freshly cracked
06 - 1 tablespoon of olive oil

→ Parmesan-Crusted Potatoes

07 - 1.5 pounds of baby potatoes (Yukon Gold or red), cut in halves
08 - 3 tablespoons of olive oil to coat
09 - 4 garlic cloves, minced finely
10 - 1/3 cup of freshly grated Parmesan cheese
11 - 1/2 teaspoon of salt
12 - 1/4 teaspoon of ground black pepper

13 - 1 tablespoon freshly chopped parsley

# Instructions:

01 - Preheat the oven to 400°F (200°C). Cover a roomy baking tray with a sheet of parchment or lightly grease it with oil.
02 - Use paper towels to dry the chicken well. Combine Italian herbs, paprika, salt, and pepper in a small bowl. Pour olive oil over the chicken, then rub in the seasoning blend so it’s evenly coated all around.
03 - Put your potato halves in a mixing bowl and toss them in olive oil until fully coated. Sprinkle in Parmesan, garlic, salt, and pepper. Give it a good stir so that every potato gets some of that cheesy goodness.
04 - Lay the chicken breasts on one side of your baking sheet, leaving some space between them. Spread your potatoes on the other side, making sure the cut side is facing down for better crisping.
05 - Slide the tray into the oven and bake 25-30 minutes. Flip the potatoes at the halfway point to brown them evenly. The chicken is ready when it reads 165°F (74°C) inside—use a meat thermometer to check quickly.
06 - In the last 5 minutes, sprinkle a bit more Parmesan over both the chicken and potatoes. Turn on your broiler to make them golden and crisp on top.
07 - Remove the sheet pan from the oven, sprinkle fresh parsley across the dish, and enjoy the crispy potatoes with juicy chicken as soon as you plate them.
