# Ingredients:

→ Ramen Base

01 - ¾ teaspoon crushed red pepper flakes
02 - 1 inch piece of fresh ginger, thinly sliced
03 - 6 garlic cloves, minced or grated
04 - 2 shallots, diced
05 - 2 pieces thick-cut bacon, diced

→ Broth & Seasonings

06 - 1 tablespoon sesame oil, toasted
07 - ¼ cup white miso paste
08 - ¾ cup canned coconut milk (or your choice of milk)
09 - 8 cups chicken broth with low sodium
10 - 3 tablespoons chili paste, preferably Gochujang
11 - ¼ cup soy sauce, low sodium

→ Noodles & Vegetables

12 - 4 cups young spinach leaves, chopped
13 - 4 portions of ramen noodles

→ Chicken Katsu

14 - Kosher salt, for seasoning to taste
15 - 3 tablespoons sesame seeds
16 - 1 cup Panko crumbs
17 - 4 chicken cutlets, or 2 chicken breasts sliced in half horizontally

→ Toppings

18 - Chili oil drizzle
19 - Chopped green onions
20 - Sesame seeds, toasted
21 - Hard- or soft-boiled eggs
22 - Crispy nori sheets

# Instructions:

01 - In a big pot or Dutch oven over medium heat, cook the bacon bits until crispy, around 5 minutes. Toss in the garlic, diced shallots, ginger slices, and pepper flakes, stirring for about 3 minutes until fragrant and golden.
02 - Pour the broth, soy sauce, and milk into your pot. Stir in the chili paste and miso until smooth. Turn the heat down a bit and let it simmer gently for 10 minutes.
03 - Combine sesame seeds and Panko crumbs in a shallow dish. Sprinkle in some salt. Firmly press the chicken pieces into the mix, making sure the coating sticks well.
04 - In a skillet, heat some oil over medium-high. Cook the chicken pieces for 3-4 minutes on each side until crispy and golden. Move them to a cutting board, add a sprinkle of salt, and slice thinly.
05 - Add spinach, ramen noodles, and a dash of sesame oil to the broth. Let everything sit for about 5 minutes so the noodles soften to perfection.
06 - Spoon noodles into bowls and pour the hot broth on top. Layer on the chicken slices and add your favorite toppings like eggs, green onions, sesame seeds, and chili oil. Enjoy warm!
