In a saucepan, gently warm the milk with lavender and honey. Stop before it boils.

Take the pan off the heat and let the lavender sit in the milk for around 2 minutes.

Put in the tea and mint (if you’re using it), and give it another 2-minute steep.

Pour through a strainer into cups. For a latte look, save 1/2 cup of milk to froth and add on top.
