Set the oven temp to 475°F. Slice each potato into about 8 wedges after peeling. Lightly toss them in oil to coat, then lay them out on a greased pan. Sprinkle with salt.

Pop them in the oven for 15 minutes. Flip the wedges, season the other side, and bake again for another 10–20 minutes until golden and crispy. Keep checking them near the end.

Melt butter in a pot. Stir in flour and cook for about 30 seconds to a minute. Gradually pour in milk, whisking the whole time. Let it cook until thick (3-4 minutes). Pull it off the heat, stir in the cheese slowly, and season with cayenne, salt, and pepper.
