Easy Cheese Fries (Print Version)

# Ingredients:

01 - 3/4 cup shredded sharp cheddar (about 3 oz).
02 - 1 tablespoon all-purpose flour (roughly 8g).
03 - Pinch of cayenne for a little heat.
04 - Salt and pepper for extra flavor.
05 - 3/4 cup milk (use any kind you like).
06 - 2 tablespoons olive oil for coating.
07 - 1 tablespoon salted butter (about 14g).
08 - Seasoning salt (or just stick with basic salt and pepper).
09 - 2 medium to large russet potatoes.

# Instructions:

01 - Set the oven temp to 475°F. Slice each potato into about 8 wedges after peeling. Lightly toss them in oil to coat, then lay them out on a greased pan. Sprinkle with salt.
02 - Pop them in the oven for 15 minutes. Flip the wedges, season the other side, and bake again for another 10–20 minutes until golden and crispy. Keep checking them near the end.
03 - Melt butter in a pot. Stir in flour and cook for about 30 seconds to a minute. Gradually pour in milk, whisking the whole time. Let it cook until thick (3-4 minutes). Pull it off the heat, stir in the cheese slowly, and season with cayenne, salt, and pepper.
04 - Dish up those fries and pour the cheesy goodness all over the top.

# Notes:

01 - Shred the cheese yourself for better melting.
02 - Don't pile fries too close together on the pan.
03 - Pour in milk bit by bit to avoid lumps.
04 - Best served right away while still warm.
