Easy Goat Cherry Toast (Print Version)

# Ingredients:

→ Foundation

01 - A dozen baguette slices, each about half an inch thick
02 - 2 teaspoons of top-notch olive oil (go for extra virgin)

→ Toppings

03 - 1 piece of rosemary, leaves only
04 - A tablespoon plus one teaspoon of honey
05 - 4 tablespoons of creamy goat cheese
06 - Two dozen cherries, pitted and halved; fresh or frozen work
07 - 4 tablespoons of rich cream cheese
08 - Half a teaspoon of sea salt flakes
09 - 1 tablespoon balsamic glaze (store-bought or homemade works)

# Instructions:

01 - Brush each slice of bread lightly with olive oil. Put them in the oven at 375°F for around 7 to 8 minutes. Halfway through, flip the slices for even crispiness. They should turn crisp outside but stay soft inside.
02 - Arrange cherry halves, cut side up, on parchment-covered baking tray. Sprinkle chopped rosemary leaves and drizzle with olive oil. Pop them in the oven at the same time as the bread for 5-7 minutes. Discard the rosemary sprig afterward.
03 - Blend goat cheese, cream cheese, one teaspoon honey, half a teaspoon of lemon juice, and some zest (same amount). Keep blending until super smooth and silky.
04 - Spread the cheese blend generously on each slice. Top with 2-3 cherry halves per slice. Drizzle with a bit of honey and balsamic glaze. Sprinkle sea salt flakes and scatter fresh rosemary on top.

# Notes:

01 - Roasted cherries stay good in the fridge for up to 3 days.
02 - The cheese blend can be made in advance. Keep it refrigerated in an airtight container, but eat it within 5 days.
