Garlic Mushroom Spinach Mix (Print Version)

# Ingredients:

01 - Extra virgin olive oil, 2 tbsp
02 - Sliced mushrooms (any variety: button, cremini or mixed), 1 pound
03 - Packed fresh spinach, 4 cups
04 - Minced fresh garlic, 4 cloves
05 - Squeezed lemon juice, 1 tbsp
06 - Black pepper and sea salt to taste

07 - Chopped fresh parsley
08 - Spicy red pepper flakes

# Instructions:

01 - First, thoroughly rinse your mushrooms and dry them using paper towels. Cut them into similar-sized pieces for even cooking. Wash spinach and put it aside. Finely chop the garlic and squeeze your lemon.
02 - Warm a big skillet over medium heat, then pour in olive oil to coat the bottom.
03 - Toss sliced mushrooms into the heated oil. Cook them for about 5-7 minutes, giving them an occasional stir until they turn nicely brown and soft.
04 - When mushrooms look nearly done, put in your chopped garlic. Stir it around for just 1-2 minutes. Don't let it burn or you'll lose all those wonderful flavors.
05 - Drop in all your fresh spinach and gently mix everything. Sprinkle with salt and pepper as you like, then drizzle with tangy lemon juice. Give it one last quick stir to blend everything together.

# Notes:

01 - You can use whatever mushrooms you've got handy, but cremini gives the richest taste
02 - Don't worry when your spinach shrinks down a lot during cooking
03 - For the tastiest results, always go with freshly chopped garlic instead of jarred stuff
