Tomato Herb Fritters (Print Version)

# Ingredients:

→ Fresh Produce

01 - 2 juicy tomatoes, diced small (roughly 250g)
02 - 1/2 red onion, chopped tiny
03 - 2 fat garlic cloves, crushed fine

→ Fresh Herbs & Seasonings

04 - 1/2 bunch fresh dill, snipped small (about 10g)
05 - 1/2 bunch fresh parsley, cut thin (about 15g)
06 - Grated peel from 1 lemon
07 - 1/2 teaspoon salt, or whatever tastes right
08 - Black pepper sprinkled to your liking

→ Dry Ingredients

09 - 85g all-purpose flour
10 - 1/2 teaspoon baking powder

# Instructions:

01 - Dice your tomatoes really small and toss them into a big bowl - they'll make up the main part of your fritters.
02 - Throw in your chopped onions, crushed garlic, lemon peel, and all those herbs with the tomatoes. Add the flour, baking powder, salt and pepper, then stir till everything comes together like thick batter.
03 - Pour enough olive oil to coat a pan and warm it on medium. Spoon big dollops of your mix into the hot oil, let them brown for a minute or two, then flip and cook till the other side turns golden too.
