French Onion Pot Pasta (Print Version)

# Ingredients:

→ Core

01 - 2 tablespoons olive oil
02 - 4 large sweet onions
03 - 1/4 cup fortified wine
04 - 1/2 cup light cooking wine
05 - 3/4 teaspoon crushed thyme
06 - Sea salt and cracked pepper as needed

→ Noodles & Stocks

07 - 1 lb tube pasta, from package
08 - 4 cups rich meat stock
09 - 2 cups plain water, add more if needed
10 - 1 teaspoon umami sauce

→ Garnishes

11 - 6 oz aged Swiss cheese, freshly shredded
12 - 1/4 cup light cream mixture
13 - Grated Italian cheese for topping
14 - Chopped herbs for garnish

# Instructions:

01 - Soften sliced onions with oil, salt, and some water under lid at medium flame for 10 minutes till tender
02 - Remove lid and keep cooking, giving an occasional stir until they turn dark golden, roughly 1 hour
03 - Pour in fortified wine and cooking wine, loosen tasty bits from pan bottom, simmer 2 minutes
04 - Throw in pasta, stocks, and flavor boosters. Bring to boil then lower heat for 20 minutes until pasta's just right, stir regularly
05 - Mix in Swiss cheese until smooth, then blend in cream mixture. Sprinkle with Italian cheese and herbs

# Notes:

01 - Pour in extra water while cooking if it gets too thick
02 - Try full cream instead of light cream mix for a more luxurious sauce
