Cook the sausage in a big skillet on medium heat till fully browned. Take it out and dab away extra fat.

Put sausage back in the pan, sprinkle flour over it and mix well.

Slowly pour in milk while stirring on medium heat until it's as thick as you want.

Sprinkle in salt, pepper, and a bit of cayenne or red pepper flakes if you want some kick.
