Peanut Butter Yogurt Bars (Print Version)

# Ingredients:

01 - 1/2 cup smooth peanut butter.
02 - 1 tablespoon honey or maple syrup.
03 - 1 teaspoon pure vanilla extract.
04 - 1 cup plain Greek yogurt.
05 - 2 tablespoons crushed salted peanuts.
06 - 2 tablespoons coconut oil.
07 - 1 cup chocolate chips (about 6 ounces).
08 - Extras: Popsicle sticks.
09 - Extras: Silicone mat or wax paper.

# Instructions:

01 - Cover a sheet with a silicone mat or some wax paper.
02 - Stir together peanut butter and yogurt. Mix in vanilla and honey until it’s creamy and smooth.
03 - Spoon part of the mixture into small mounds. Add sticks, then cover with the rest of the mix. Gently press to flatten. Sprinkle peanuts on top. Freeze for a couple of hours.
04 - Heat the coconut oil and chocolate chips until melted. Dip frozen bars, then place back in the freezer to chill.

# Notes:

01 - Mini chocolate chips can go in the filling for more texture.
02 - Wait 5–10 minutes after taking out of the freezer to enjoy.
03 - Can stay frozen for up to a month.
04 - Use regular peanut butter, not the natural kind.
