Rich Chocolate Pie (Print Version)

# Ingredients:

01 - 25 whole Oreo cookies (about 244g).
02 - 60g melted unsalted butter.
03 - 1/4 cup cornstarch.
04 - 2/3 cup fine sugar.
05 - Small dash of salt.
06 - 2 cups milk.
07 - 1 cup cream.
08 - 4 separated egg yolks.
09 - 2 tablespoons unsalted butter.
10 - 1 teaspoon pure vanilla extract.
11 - 150g dark chocolate with 70% cocoa.
12 - 75g milk chocolate.
13 - 1 1/2 cups whipping cream for the top.
14 - 2 tablespoons white sugar.
15 - 1/2 teaspoon pure vanilla extract.

# Instructions:

01 - Heat your oven to 350°F or 180°C. Cut a circle from parchment paper that fits your pie dish.
02 - Crush Oreos into fine crumbs and stir in the melted butter. Push mixture firmly into your pie dish and pop in oven for 10 minutes. Let it cool down.
03 - Mix all dry stuff together, then pour in milk, cream and yolks. Stir non-stop over medium heat until it gets thick. Throw in butter, chocolate and vanilla.
04 - Empty the filling into your cookie crust and cover the top with paper. Let it sit for 2 hours then stick it in the fridge overnight or longer.
05 - Beat together cream, sugar and vanilla until fluffy, then spread on top. You can sprinkle some grated chocolate if you want.

# Notes:

01 - You can make this up to 3 days before serving.
02 - Mix in a bit of mascarpone to keep the cream firm.
03 - Get proper baking chocolate, not the kind you'd snack on.
