Crispy Mac Bites (Print Version)

# Ingredients:

01 - 14 slices of bacon, about 284g.
02 - 227g of macaroni elbows.
03 - 30g of butter or saved bacon drippings.
04 - 16g plain flour.
05 - 270ml of milk.
06 - 227g shredded sharp cheddar.
07 - 227g shredded Monterey Jack cheese.
08 - Seasonings: garlic powder, salt, pepper, nutmeg, cayenne.
09 - 125g of plain all-purpose flour.
10 - 2 eggs, whisked.
11 - 180g crispy panko crumbs with seasonings.
12 - Seasonings: onion powder, salt, pepper.
13 - Oil for frying.

# Instructions:

01 - Cook 'til crispy, chop it up, save 2 spoons of drippings.
02 - Make pasta for 7 mins, stir up roux with flour and grease, toss in milk, seasonings, cheeses, mix with pasta and bacon, chill for 3+ hours.
03 - Slice into 36 cubes, roll in flour, coat in eggs, toss in breadcrumbs, freeze 'til cooking time.
04 - At 360-370°F, fry in pieces for 4-5 mins, let drain on paper towels, serve while warm.

01 - Freeze before frying if needed.
02 - Make macaroni mixture first.
03 - Shred fresh cheese for better flavor.
04 - Great for get-togethers.
05 - Double the batch if needed.
