Crispy Eggplant Airfryer (Print Version)

# Ingredients:

→ Main Ingredients

01 - 2 tablespoons of avocado oil
02 - 1 large eggplant, skin removed and chopped into 1-inch chunks

→ Seasonings

03 - 1/4 teaspoon of kosher salt, plus extra for pre-salting
04 - 1 teaspoon of dried thyme
05 - 1/2 teaspoon of smoked paprika
06 - 1 teaspoon of dried rosemary
07 - 1/2 teaspoon of garlic powder

# Instructions:

01 - Sprinkle salt on the eggplant cubes and let them rest for about 15-30 minutes. Blot well with paper towels afterward.
02 - Combine the diced eggplant with avocado oil and all the spices so everything is evenly coated.
03 - Set the air fryer to 400°F and cook for 18 minutes, flipping the pieces halfway to brown all sides.
