Chicken Rolls Southwest (Print Version)

# Ingredients:

→ Egg Roll Stuffing

01 - 2 tbsp olive oil
02 - 8 oz shredded cooked chicken
03 - 1/2 cup black beans from a can, rinsed and drained
04 - 1/2 cup corn (use canned, fresh, or previously frozen)
05 - 1/3 cup chopped frozen spinach, thawed
06 - 1 finely diced jalapeño
07 - 1/4 cup chopped scallions
08 - 1/4 cup red bell pepper, chopped into small pieces
09 - 2 tbsp freshly chopped cilantro
10 - 3/4 tsp cumin powder
11 - 3/4 tsp chili powder
12 - 1/4 tsp cayenne pepper
13 - 1/2 tsp salt
14 - 1 cup grated Monterey Jack cheese
15 - 10-12 wrappers for egg rolls
16 - Oil for frying

→ Avocado Dipping Sauce

17 - 2 tbsp finely chopped fresh cilantro
18 - 1 ripe avocado, mashed until smooth
19 - 1/2 cup of ranch dressing
20 - 2 tbsp of buttermilk
21 - 1 1/2 tsp lime juice
22 - 1/4 tsp garlic powder
23 - 1/4 tsp onion powder
24 - 1/4 tsp salt

# Instructions:

01 - Heat olive oil in a large frying pan. Cook the bell pepper pieces until they soften a bit. Add the corn, black beans, green onions, jalapeño, chopped spinach, and all your seasonings (salt, cayenne, cumin, and chili powder). Stir it for 3-4 minutes, so the veggies cook through and soften.
02 - Scoop the cooked stuff out of the pan and move it to a big bowl. Stir in cheese, cilantro, and chicken strips. Mix everything evenly.
03 - Take an egg roll wrapper and position it with a corner facing you. Place around 1/4 cup of your stuffing into the center. Fold the bottom corner over, tuck in the sides, and roll it up. Use water at the top edge to seal it tight. Repeat for the rest.
04 - Heat the oil to 375°F (190°C). Fry just a few of the rolls at once until they’re crispy and brown, which takes 3 to 4 minutes. Lay them on paper towels afterward to soak up oil.
05 - Pop the mashed avocado, ranch, lime juice, cilantro, buttermilk, garlic powder, onion powder, and salt into a blender. Blend it well until the texture is smooth and creamy. Serve it as a dip for your hot rolls.
