Crispy Cauliflower Cheese Bites (Print Version)

# Ingredients:

→ Base

01 - One whole cauliflower head
02 - Regular cottage cheese (1 cup)
03 - Half cup of bread crumbs

→ Cheese & Aromatics

04 - Half cup finely grated parmesan
05 - Chopped scallions (quarter cup)

→ Seasonings

06 - Half teaspoon of garlic powder
07 - Half teaspoon of onion powder
08 - Half teaspoon of salt
09 - Quarter teaspoon ground black pepper

→ Binding

10 - One whole egg

# Instructions:

01 - Set your oven to 400°F (200°C) and let it warm up
02 - Boil or steam the cauliflower bits for about 5-7 minutes till soft, then drain and let cool a bit
03 - Squish the cooled cauliflower, then stir in the cottage cheese, egg, and all your spices until everything's mixed well
04 - Slowly add bread crumbs until the mix stays together, then shape into little tot pieces of the same size
05 - Put your tots on a baking sheet lined with parchment, cook for 20-25 minutes until they're crispy and golden
06 - Cool them down for a minute before you eat

# Notes:

01 - These tots are way better for you than the normal potato kind
02 - Great as a snack or with your main meal
03 - Make sure they're all the same size so they cook evenly
04 - Your mix should stick together but not be too dry
