Potato Apple Comfort Soup (Print Version)

# Ingredients:

01 - 3 tbsp of butter.
02 - A couple of cups of diced onions or shallots.
03 - 2 ½ lbs of peeled and cut sweet potatoes or yams.
04 - 2 big apples (around 1 ¼ lbs).
05 - 6 cups of veggie stock.
06 - ¾ tsp cinnamon powder.
07 - ¾ tsp nutmeg powder.
08 - 1 tsp salt.
09 - 2 to 3 tbsp of freshly squeezed lemon juice.
10 - 1 tbsp maple syrup (add extra for topping if you'd like).

# Instructions:

01 - On medium heat, melt butter in a large pot. Stir in onions and soften them for about 3-4 minutes.
02 - Drop in the chunks of sweet potatoes and apples. Stir now and then, cooking for 3 minutes.
03 - Pour 2 cups of broth to scrape off bits from the bottom. Add the rest of the broth, spices, and salt. Let it simmer for about 7-10 minutes till potatoes are soft.
04 - Turn off the heat and carefully blend everything smooth using an immersion blender.
05 - Adjust taste with more lemon juice, syrup, or salt. Serve hot and drizzle with more syrup if you'd like.

# Notes:

01 - Yields about 9-10 cups.
02 - Swap butter for olive oil to make it vegan.
03 - Stays good up to 3 days in the fridge or 3 months frozen.
