Mushroom Spinach Pasta (Print Version)

# Ingredients:

01 - 400g (14 oz) any pasta you like
02 - 3 tablespoons extra virgin olive oil
03 - 1 diced onion
04 - 3 garlic cloves, finely chopped
05 - 400g (14 oz) sliced mushrooms
06 - 300g (10.5 oz) baby spinach leaves
07 - 1/2 cup veggie stock
08 - 1-2 tablespoons tamari sauce
09 - Pepper and salt as needed
10 - 2 teaspoons fresh lime juice
11 - Fresh parsley, chopped up
12 - 5 tablespoons toasted pine nuts
13 - Small amount of smoked paprika
14 - Optional vegan parm for topping

# Instructions:

01 - Cook your pasta in water with salt until done as shown on package
02 - Put pine nuts in a dry skillet until they turn golden brown, then remove
03 - Cook onions with mushrooms in oil for about 3 minutes, then throw in garlic for half a minute
04 - Pour in veggie stock and tamari, let bubble for 1-2 minutes before adding spinach until soft
05 - Mix everything with pasta, add seasonings, and sprinkle pine nuts on top

01 - Try adding some plant-based cream for extra richness
02 - You'll have dinner on the table in just 15 minutes
03 - Works great with spaghetti, penne, or any pasta shape
