Creamy Kielbasa (Print Version)

# Ingredients:

01 - 750g potatoes, chopped into cubes and peeled.
02 - 300g kielbasa sausage, sliced into chunks.
03 - 1 medium carrot, chopped small.
04 - 1 medium onion, finely chopped.
05 - 4 garlic cloves, minced.
06 - 2 celery stalks, diced finely.
07 - 300ml whole milk.
08 - 1.25 liters chicken broth.
09 - 100g shredded cheddar cheese.
10 - 1 tablespoon of extra virgin olive oil.
11 - A handful of fresh parsley, minced.
12 - 1/2 teaspoon chili flakes, or to taste.
13 - Salt and black pepper for flavor.

# Instructions:

01 - Warm up oil in a big pot. Fry the kielbasa till crispy edges form, then set aside on a plate.
02 - In the same pot, cook onion, carrot, and celery in the sausage drippings. Toss in garlic and chili flakes for a zing.
03 - Pour in the stock with potatoes. Get it boiling, then let it gently bubble for around 10 minutes till the potatoes soften.
04 - Stir hot liquid into the milk to warm it—then pour it into the pot. Add sausage back, blend in cheese till melty, toss parsley on top, and season.
