Garlic Mushroom Pasta (Print Version)

# Ingredients:

→ Base

01 - 4 ounces raw pasta
02 - 1 tablespoon extra virgin olive oil
03 - 3 tablespoons unsalted butter, split
04 - 1/2 medium onion, diced
05 - 8 ounces brown cremini mushrooms, cut into slices
06 - 3 cloves garlic, finely chopped
07 - 1/2 teaspoon brown Dijon mustard

→ Sauce

08 - 1/4 cup veggie or chicken stock, or a dry white wine
09 - 1/2 teaspoon fresh lemon juice
10 - Zest from 1/2 fresh lemon
11 - 1/2 cup grated parmesan, freshly done
12 - 2 tablespoons fresh parsley, minced
13 - Salt and black pepper for seasoning

# Instructions:

01 - Get pasta tender but still firm in boiling salted water
02 - Brown the onions with mushrooms using butter and oil for 8-10 mins until golden
03 - Add leftover butter, chopped garlic, and mustard. Let cook another minute
04 - Pour in stock and lemon juice. Let bubble for a minute
05 - Remove from stove, stir in cheese, herbs, and some pasta water. Mix with cooked pasta

# Notes:

01 - You can make a bigger batch but expect mushrooms to take extra time browning
02 - Makes enough for 2 people as a full meal or 4 as a smaller side
