Creamy Chicken and Gravy (Print Version)

# Ingredients:

01 - 1 medium onion, diced.
02 - 1 tablespoon olive oil.
03 - 1 tablespoon butter.
04 - 1½ lbs chicken breasts, sliced thin.
05 - ½ teaspoon kosher salt.
06 - ½ teaspoon poultry seasoning.
07 - ¼ teaspoon black pepper.
08 - 3 tablespoons flour.
09 - 3 tablespoons butter.
10 - 1¼ cups chicken stock.
11 - ¾ teaspoon fresh thyme (use ¼ teaspoon if dried).
12 - ½ teaspoon black pepper.
13 - ¼ teaspoon kosher salt.
14 - 1-2 tablespoons plain Greek yogurt.
15 - Fresh mashed potatoes.

# Instructions:

01 - Warm oil and butter in a big pan. Sauté diced onion for 5 minutes. Sprinkle chicken with seasonings. Cook chicken on both sides for 4-5 minutes until browned. Pull chicken and onions out—set aside to keep warm.
02 - On medium-low, melt butter. Add flour and whisk, cooking for 1 minute. Slowly pour in stock, stirring until smooth. Mix in thyme and seasonings. Let it cook for 2-3 minutes to thicken.
03 - Place chicken back into the pan. Cover and let it cook for another 3-4 minutes. Turn off heat, mix in yogurt, and spoon over mashed potatoes for serving.
