Cheeseburger Soup (Print Version)

# Ingredients:

01 - 1 pound of ground beef.
02 - 3/4 cup of shredded carrots.
03 - 3/4 cup of chopped onion.
04 - 3/4 cup of diced celery.
05 - 1 teaspoon of parsley, dried.
06 - 1 teaspoon of dried basil.
07 - 4 tablespoons of butter, split.
08 - 3 cups of chicken stock.
09 - 4 cups of peeled, diced potatoes.
10 - 1/4 cup of all-purpose flour.
11 - 2 cups of cubed Velveeta cheese.
12 - 1 1/2 cups of milk.
13 - 3/4 teaspoon of salt.
14 - 1/4 to 1/2 teaspoon of black pepper.
15 - 1/4 cup of sour cream.

# Instructions:

01 - Cook the beef, drain it, and put it aside. Use 1 tablespoon of butter to soften the veggies. Toss in the herbs as you sauté everything.
02 - Mix the broth, beef, and potatoes. Bring it all to a rolling boil, then simmer about 10-12 minutes until the potatoes soften.
03 - Melt 3 tablespoons of butter. Stir in the flour and cook for 3-5 minutes. Blend this into the soup, boil it, and let it cook 2 minutes.
04 - Turn the heat down low. Stir in the cheese, milk, salt, and pepper. Cook till the cheese blends. Take off the heat and mix in the sour cream.
