Crunchy Cod Burger (Print Version)

# Ingredients:

→ Fish

01 - White Cod or comparable white fish (24 ounces)
02 - Pinch of salt and ground pepper for flavor

→ Dry Dredge

03 - Regular flour (1 cup)
04 - Old Bay Spice (½ tablespoon)

→ Wet Dredge Batter

05 - Regular flour (1 cup)
06 - Old Bay Spice (1 tablespoon)
07 - Sweet paprika (½ tablespoon)
08 - Ground turmeric (1 teaspoon)
09 - Ground white pepper (½ teaspoon)
10 - Baking powder (½ teaspoon)
11 - Fresh egg (1)
12 - Bubbly water (1 cup)
13 - Dash of salt and pepper

→ Tartar Sauce

14 - Creamy mayo (½ cup)
15 - Chopped dill pickle (3 tablespoons)
16 - Minced capers (1 tablespoon)
17 - Snipped fresh parsley (1 tablespoon)
18 - Fresh lemon squeeze (1 tablespoon)
19 - Tangy Dijon (2 teaspoons)
20 - Dash of salt and pepper

→ For Frying and Assembly

21 - Neutral cooking oil or peanut oil (2 quarts)
22 - Soft burger buns (4)
23 - Sliced cheddar (2, cut in half)

# Instructions:

01 - Warm your cooking oil in a deep sturdy pot to 375°F and keep it steady at this heat
02 - Stir together mayo, tangy Dijon, fresh lemon juice, diced pickles, minced capers and chopped parsley in a small bowl. Add salt and pepper to your liking
03 - Slice cod into squares that match your bun size (about 4-6 oz each). Sprinkle with salt and pepper and rest them on a wire rack over a tray
04 - Mix flour with Old Bay in one dish for your dry coating. In another bowl, blend the other flour, spices, egg and bubbly water until it looks like runny dressing
05 - Roll each fish piece in the dry mix first, then dunk in the wet batter, letting extra drip away
06 - Drop each coated piece into hot oil for about 2-3 minutes on each side until they turn golden. Let them drain on a wire rack
07 - Hold burger buns over boiling water for about 10 seconds to soften them
08 - Spread sauce on bottom bun, add fried fish, top with half cheese slice, more sauce, then the top bun
