Cheesy Puffs (Print Version)

# Ingredients:

01 - 2 cups of softened mashed potatoes.
02 - 3 eggs, whisked well.
03 - 1 cup of shredded Monterey Jack cheese, divided.
04 - A handful of finely chopped fresh chives (about 1/4 cup).
05 - Seasoning: pinch of salt and black pepper.
06 - Optional: Sour cream for serving.
07 - Extra chopped chives to sprinkle on top.

# Instructions:

01 - Set your oven to 400°F and lightly grease a mini muffin pan with 24 cups.
02 - Stir together the mashed potatoes and eggs. Mix in 3/4 cup of cheese, fold in the chives, and sprinkle in some salt and pepper.
03 - Scoop the mixture into the greased muffin cups, then sprinkle the rest of the cheese on top of each one.
04 - Let them bake for 15-20 minutes, or until the tops look crispy and golden. Let them cool for a few minutes, gently remove them, add your garnish, and enjoy warm.

01 - Works well with leftover mashed potatoes.
02 - Stir gently to avoid overmixing.
03 - Make sure the potatoes aren't cold—they should be room temp.
