Set your oven to 400°F and lightly grease a mini muffin pan with 24 cups.

Stir together the mashed potatoes and eggs. Mix in 3/4 cup of cheese, fold in the chives, and sprinkle in some salt and pepper.

Scoop the mixture into the greased muffin cups, then sprinkle the rest of the cheese on top of each one.

Let them bake for 15-20 minutes, or until the tops look crispy and golden. Let them cool for a few minutes, gently remove them, add your garnish, and enjoy warm.
