# Ingredients:

01 - 1 lb chicken (breast or thighs), cut into thin slices
02 - 2 tbsp olive oil
03 - 1 onion, thinly sliced
04 - 1 bell pepper, sliced into strips
05 - 2 garlic cloves, minced finely
06 - 1 tsp paprika
07 - 1/2 tsp salt
08 - 1/2 tsp black pepper
09 - 1/2 tsp dried oregano
10 - 1/2 tsp dried thyme
11 - 1 tbsp soy sauce (optional for extra flavor)

→ Assembly

12 - 4 hoagie or sub rolls
13 - 4 slices of provolone or American cheese
14 - Add-ons you love: sautéed mushrooms, pickled jalapeños, caramelized onions, or extra peppers

# Instructions:

01 - Warm your skillet over medium-high heat and pour in the olive oil, letting it heat till it shimmers.
02 - Put the chicken slices into the pan and stir every so often. Let it cook completely and turn golden brown, 5-7 minutes.
03 - Throw in the onion and bell pepper slices. Cook them until they're soft and lightly browned, about 5 minutes.
04 - Add garlic, paprika, salt, pepper, oregano, and thyme to the pan. Mix it all up and cook for another 1-2 minutes to bring out the flavors.
05 - If you like, pour in the soy sauce at this point and stir well to mix.
06 - Toast hoagie rolls lightly, either in a toaster or under the broiler, until they're lightly crispy.
07 - Place a single cheese slice on the bottom of each toasted bun so it starts to melt.
