Cheesecake Filled Cookies (Print Version)

# Ingredients:

→ Cookie Mixture

01 - 1¾ cups plain flour
02 - ½ teaspoon baking soda
03 - ¼ teaspoon salt
04 - ¼ teaspoon baking powder
05 - ½ cup unsalted butter at room temp
06 - ½ cup packed brown sugar
07 - ½ cup white sugar
08 - 1 teaspoon vanilla
09 - 1 egg, large
10 - ½ cup freeze-dried strawberries, crushed up

→ Center Filling

11 - 4 oz softened cream cheese
12 - 2 tablespoons sugar
13 - 1 teaspoon vanilla
14 - ¼ cup strawberry puree or jam

# Instructions:

01 - Stir together cream cheese, sugar, vanilla, and strawberry jam until the mix is smooth. Pop it in the fridge for a bit.
02 - Whip the butter and sugars together. Add in the egg and vanilla, then fold in your dry items and strawberries. Let it chill for half an hour.
03 - Grab about a tablespoon of dough, flatten it, add a dab of filling, and cover with another tablespoon of dough. Seal the edges and roll it into a ball.
04 - Put them in the oven at 350°F for about 12-15 minutes, or until they’re lightly browned on top.

# Notes:

01 - Keep in the fridge for up to 5 days or freeze for 2 months.
02 - The dough stays good if made a day early.
