Tortellini Caprese Mix (Print Version)

# Ingredients:

→ Main Ingredients

01 - 5 cups uncooked cheese tortellini (about 20 oz)
02 - Cherry tomatoes cut in half (10 oz)
03 - Mozzarella pearls (8 oz)
04 - Chopped spinach (1 cup)
05 - Fresh basil, chopped (1/4 cup)

→ Dressing

06 - Olive oil (1/2 cup)
07 - Balsamic vinegar (2 tablespoons)
08 - Minced garlic (3-4 cloves)
09 - Italian seasoning (3/4 teaspoon)
10 - Salt and pepper (1/2 teaspoon each)
11 - Drizzle of balsamic glaze (if you want)

# Instructions:

01 - Follow package directions to cook tortellini till al dente. Cool it down by rinsing with cool water. While pasta cooks, get all your other stuff chopped and ready.
02 - Grab a big bowl and throw in the cooled pasta, spinach, tomatoes, mozzarella, basil and garlic. Pour your olive oil and balsamic vinegar on top, then sprinkle with Italian seasoning, salt and pepper. Mix everything together well.
03 - Keep it in the fridge until you're ready to eat. Give it a good stir before serving since the oil tends to sink to the bottom. If it seems dry, add a splash more olive oil and finish with a balsamic glaze drizzle if you'd like.

# Notes:

01 - Stays fresh for up to 5 days when kept in a sealed container in the fridge
02 - You'll need to add some more olive oil if you've kept it cold for over a few hours
03 - Don't forget to stir before eating so the oil gets mixed through again
