Simple Cottage Cheese Flatbread (Print Version)

01 - 1 cup self-rising flour
02 - 1 cup cottage cheese

# Instructions:

01 - Throw the cottage cheese and flour into a bowl and give it a good stir until it turns into a soft, sticky dough. If it’s a bit too wet to manage, sprinkle in a little more flour—just a tablespoon at a time—to make handling easier.
02 - Find a clean spot, toss some flour on it, and plop the dough down on top. Break it into 4 equal bits, then flatten each one out into a round or oval shape about a quarter-inch thick using your hands or a rolling pin.
03 - Warm a non-stick pan or griddle over medium heat. Once it’s hot, place each piece of dough in the pan and cook for 2–3 minutes on each side. You’ll know they’re done when golden brown spots pop up.
04 - Serve them while still warm. Eat them plain or spice things up with hummus, avocado, honey drizzle, or some smoked salmon on top.

# Notes:

01 - Don’t have self-rising flour? You can make your own by mixing 1 cup of plain flour with 1 1/2 teaspoons of baking powder and 1/4 teaspoon salt.
02 - Feel free to make the flatbreads thicker or thinner depending on what you like!
