Bring water to a boil, toss all the spices and tea bags in. Lower the heat and let it brew for 5 minutes to blend the flavors.

Turn off the stove, mix in the honey and vanilla. Stir well until the honey melts in. Take out the tea bags and vanilla pod (if used).

Leave the spiced tea to cool. For quicker results, place the pot in a bowl filled with ice water.

Whisk the milk lightly or shake it in a sealed jar to get bubbles on top. Or warm it a bit and whip it.

Drop in some ice cubes, pour the cool chai to two-thirds of the glass, then layer the milk on top. If you're using extract, add it here.
