Brie Apple Chicken (Print Version)

# Ingredients:

→ Chicken & Stuffing

01 - 4 skinless chicken breasts
02 - 1 teaspoon table salt
03 - 1/2 teaspoon ground pepper
04 - 1 Honeycrisp apple, cut into thin half moons
05 - 4 ounces chilled brie, sliced thin

→ Apple Cider Glaze

06 - 1 cup apple juice or cider
07 - 2 tablespoons real maple syrup
08 - 1/2 tablespoon crushed garlic (roughly 2 cloves)
09 - 1 teaspoon Dijon mustard
10 - 2 teaspoons fresh thyme pulled from stems
11 - 1/2 teaspoon table salt

# Instructions:

01 - Warm your oven to 375°F. Line your baking tray with parchment or spray your oven-safe pan with cooking spray.
02 - Slice each breast sideways like a book but stop before cutting through. Sprinkle salt and pepper inside, then stack in 7-9 apple slices and 3-4 pieces of cold brie. Fold the chicken closed.
03 - Put your stuffed chicken onto your ready pan and cook for 25-30 minutes until nearly done.
04 - As chicken bakes, mix all your sauce stuff in a small pan over medium heat. Let it bubble and shrink by half until it's sticky and thick, around 12-15 minutes.
05 - Turn on your broiler. Paint the chicken with sauce and broil for 10-12 minutes, keeping an eye on it, until chicken hits 165°F inside. Serve hot with extra sauce poured over.

# Notes:

01 - Store brie in fridge until you're ready to slice it
02 - Don't walk away during broiling or sauce might burn
03 - You'll need roughly 7-9 apple pieces and 3-4 brie pieces per chicken breast
